Jalapeño rings filled with cream cheese. Marinated backstrap wrapped in bacon & sprinkled with bbq blend seasoning. May add just a little bbq sauce drizzled over them.

More pork belly. We did Christmas yesterday and just enjoying the 2 of us today. Pork belly and fried potatoes for me and pork belly, rice and bittergourd for her. She said my pork belly is Chinese/Singapore chef (best in the world) level of perfection. She's brutally honest about my grilling/cooking so that's a HUGE win for me!

Chili…but more importantly for breakfast we tried a French toast recipe that uses Hawaiian rolls…it was amazing

Absolutely AMAZING burgers!!! The wife's not a beef fan and said it's amazing. 220° for 45 min (still pink) with a little apple wood then take it off to shoot the Kamado up to 500° and slap it in a cast iron coated in bacon grease that was in the heating kamado. AMAZING!!!

You've seen my grillin setup. I have a lot of options. 90% of the time it's the Kamado.

Take Block of cream cheese. Criss cross score it. Put a couple teaspoons of your favorite rub on it and smoke at 180 for an hour. Spread on anything.

Cut the pork loin into 30 chops. Fried 5 & ate 3. Good tender chops.
