Cheap salmon on the KJ Jr. Dry brined with smoked sea salt then put a light glaze of honey with a dust of Meat Church Texas Sugar. Cooked at about 250.

You'll enjoy it more if you do thighs or legs.Breast is extremely lean and low and slow loves the fatty cuts.

Flank steak. Marinated overnight in SPG + Cilantro + Lime juice. Cooked on the flat top grill with ghee (Butter). About 6 minutes a side. Yum!

Best bang for the buck in kitchen knives is Victorinox Fibrox. Can get them on Amazon. I'd recommend not getting a set as you always get shit you don't need or watch.
