Charcoal cooking tips

Post by justang1997 » Mon Mar 12, 2012 1:23 pm

I suck at charcoal cooking but that's my only grill. My best results have been to only use matchlight and I don't pyramid stack it. I lay out an even layer of coals by hand so there is even heat with no cool spots. That has helped quite a bit. I also try to only flip burgers once.

Any tips? Should you put aluminum foil down? I never do. Vents open or closed? What about corn on the cob? It never seems to be cooked long enough. Anyone use the wood chips for flavor?

Stacking is only for getting the fire going. Once they are all lit they should be spread evenly, don't try to cook like that.

Personally I hate aluminum foil....if it can be avoided I say don't use it.

I really like indirect heat.......kind of gives it a smoker type taste as well

I also avoid using lighter fluid......I like these http://www.woodlanddirect.com/Outdoor/B ... KgodfXrDUg charcoal starters.........You dump the charcoal in the top and use newspaper (or whatever you want) in the bottom to get the coals hot.........once they are good and white, dump them evenly in the bottom of your grill.

Buy a charcoal chimney and use quality briquettes (no miejers, Kroger or Walmart), 2 sheets of newspaper and light and 15 mins you have coals ready to cook with.
Oh, how so high they fly........ only further to fall.

Chimneys are great....

Since this was bumped I'll talk about the corn....

Cooking corn on the grill takes a while and several ways to do......

My favorite: soak corn ,shucks and all in a bowl of water, up to an hour so it gets good and saturated...then throw on the grill....again I like indirect heat....these take a while if you want them to be "soft" ......sometimes we even boil them a few minutes before throwing them on the grill.....this way they are partially cooked and dont take as long, but stl get that nice taste the grill offers

Or.....shuck the corn, wrap it in foil and grill it......I like to soak the corn in butter before wrapping it up in foil....cook until corn is at desired texture....

DO NOT do as the retards at my condo did the other night. they had clearly never cooked on anything but gas. every time the fire would go down to coals (how you cook on charCOAL) they would spray more lighter fluid on it to get the flame back.....

I would hate to taste what came off that grill......
