You don't determine when the meat is done. The cut of meat determines it. Probe Tender, Internal Temp, the Bend Test, and the rib twist are the four approved methods of doneness used in preparing food outdoors.

She's taking care of sides so I just needed to smoke a couple turkey legs. I don't often get to play with the Kamado Joe Jr.

I didn't think to take a pic, but burgers. They were amazing! I put them on the Kamado for 45 min at 250° and had a cast iron griddle on it heating up also. I pulled them off a couple minutes and opened up the heat deflector plates and vents and got it up to 400° (gets there really quick!) and set them in the griddle coated with bacon grease for a few min per side. Just a total experiment that turned out fantastic! Juicy, a little smokey and with just a little sear. Just a touch more done than I like them so next time I may try around 200° for the same time. I like closer to med rare and these were more med well.

Flank steak. Marinated overnight in SPG + Cilantro + Lime juice. Cooked on the flat top grill with ghee (Butter). About 6 minutes a side. Yum!

Chicken breast, because that what I already had. I was not really that excited to try them, but damn it was the best chicken breast I've ever had that wasn't battered and fried. And it even gave the best fried chicken I've ever had a run for it's money. 220° (Kamado is insane how easy it is to maintain a dead on temp!!!) for almost 3 hours (internal temp between 155-163°) and opened it up to 350° (gets there FAST!) after brushing a BBQ/apple cider vinegar mix and leaving it 10-15min more minutes. They were 166-171° internal when I removed them. I am ABSOLUTELY SOLD on this Kamado Joe! Image

You'll enjoy it more if you do thighs or legs.Breast is extremely lean and low and slow loves the fatty cuts.

Cheap salmon on the KJ Jr. Dry brined with smoked sea salt then put a light glaze of honey with a dust of Meat Church Texas Sugar. Cooked at about 250.

I agree. When I did the whole chickens, the thighs were perfection! These were already in the freezer so I figured what the hell. I was very pleasantly surprised!

Wife's been busy...she did the white chicken chili and the cinnamon rolls. I did the pork butt. It's got about another hour.

$7 at kroger last night for a whole pork butt.
